Baked Tacos are like a mix of tacos and quesadillas. If you asked me a month ago about my favorite taco, I wouldn't have said ground beef. They can be dry, and the toppings often fall out. But these baked ground beef tacos changed that for me.

First, cook the ground beef with simple seasonings and tomato paste. It results in moist taco meat that's perfect for baked tacos.

Then, bake the ground beef in small street taco shells with lots of shredded cheese. After they're done, you can open them up and add toppings inside or just layer toppings on top. Enjoy with a fork and knife if you like.

Delicious Ground Beef Baked Tacos: A Crowd-Pleasing Fiesta!

Prep: 5 minutes Cook: 20 minutes Total: 25 minutes Servings: 4 servings

Ingredients:

  • 1 lb ground beef
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 tsp cumin
  • 1/8 tsp cayenne pepper powder
  • 2 tbsp tomato paste
  • 1 tbsp water
  • 3 cups shredded Mexican cheese blend
  • 12 street taco size white corn tortillas (about 5.5″ in diameter)

Instructions:

Preheat the oven to 425F.

Mix salt, black pepper, chili powder, garlic powder, smoked paprika, cumin, cayenne pepper powder in a small bowl.

Mix tomato paste and water in a separate bowl and set aside.

Brown the ground beef in a pan over medium heat, breaking it into crumbles as it browns.

Reduce heat to medium-low and add spice mixture and tomato paste with water. Saute until completely cooked (about 2-3 minutes).

Line a baking sheet with parchment paper and place 6 corn taco shells on it, covering them with shredded cheese. Repeat to make all baked tacos.

Put 2 tbsp of taco meat on one side of each taco.

Bake for 3 minutes, then remove from the oven and fold each taco in half, pressing lightly to keep them folded.

Return to the oven and cook for 5 more minutes.

Repeat steps 7-9 to make the next 6 tacos.

Let the tacos cool slightly, add toppings, and enjoy!
