Simple German Potato Salad with Kielbasa is a tasty dish. It mixes soft baby red potatoes with kielbasa (More Potatoes Recipes), thick-cut bacon, and a tangy dressing. Chopped parsley adds color. Serve it warm or at room temperature.

What's German Potato Salad?

It's made with boiled potatoes, dressed in a warm, tangy mustard dressing. Different from American potato salads with mayo. I added kielbasa for more flavor and protein.

Can I Make It Without Kielbasa?

Yes! Skip the kielbasa for a tasty side dish instead of a main meal.

Can I Prep German Potato Salad in Advance?

Absolutely! Brown kielbasa and store it overnight. Cook bacon a few days before, saving the grease. Store in the fridge until ready for the recipe.

Storing German Potato Salad with Kielbasa

Let leftovers reach room temperature, then store in an airtight container in the fridge. It's good for 2-3 days. Reheat in the microwave or on the stovetop before serving.
