Make this delicious and healthy Baked Turkey and Rice with Black Beans using leftover turkey or rotisserie chicken. I used leftover Thanksgiving turkey and a wild rice blend instead of yellow rice. I made a few other tweaks, but the recipe is based on one from Southern Living. It was easy to put together, and my husband loved it with the wild rice. You can try different beans for a fantastic variation. This Tex-Mex casserole is perfect for using chicken or turkey, rice, and black beans.

Delicious Baked Turkey and Rice Casserole with Black Beans: A Tasty Tex-Mex Dish

Ingredients:

  • 4 cups chopped turkey or chicken
  • 10 oz. bag Wild Rice Blend or other wild rice blend
  • 3 cups turkey broth or chicken broth
  • 1 cup chopped onion
  • 1 diced yellow bell pepper
  • 1/2 cup thinly sliced carrots
  • 2 tbsp. olive oil
  • 15 oz. can black beans, rinsed and drained
  • 10 oz. can diced tomatoes with green chilies, undrained
  • 3 cups grated Monterey Jack cheese or hot Pepper Jack cheese for a spicy kick

Instructions:

Preheat oven to 350°F.

Prepare rice using turkey or chicken broth, simmering for 20-25 minutes until cooked. Set aside.

In a large skillet, sauté onion, bell pepper, and carrots in olive oil for 5-10 minutes until tender. Set aside.

In a large mixing bowl, combine sautéed veggies, cooked rice, turkey, black beans, tomatoes with green chilies, and 2 cups of cheese.

Spread the mixture into a 9x13” glass baking dish sprayed with cooking spray. Cover with foil.

Bake at 350°F for 30 minutes.

Sprinkle the remaining cup of cheese on top and bake for an additional 10 minutes or until the cheese melts.
