Delicious Blueberry Salad Recipe
Blueberry Salad is really amazing. I can't praise it enough. It's a chilled salad made with blueberry pie filling, crushed pineapple, and grape Jell-O mix. After it sets in the fridge or freezer, a creamy layer of cream cheese and sour cream is added, making it incredibly delicious.
It's a fun and fruity salad, perfect for picnics, barbecues, potlucks, or any gathering. Although it's gluten-free, it's not exactly healthy because both the pie filling and Jell-O use cornstarch as a thickener. Blueberry Salad is rich and tasty enough to be served as a dessert.
I used to make this salad often when I catered salad luncheons for the Baptist Convention of New England in the 1990s. People always loved it, and once you try it, you'll understand why. It has the best flavors, with the pineapple and blueberries providing texture and the cream cheese layer adding a great contrast in flavors.

Ingredients:
Salad:
- 6 oz. packages Jell-O grape gelatin
- 2 cups boiling water
- 1 large can crushed pineapple (undrained)
- 21 oz. can blueberry pie filling
Topping:
- 1 cup sour cream
- 8 oz. package cream cheese (softened)
- 1/2 cup granulated sugar
- 1 tsp. vanilla extract
- 1/4 cup chopped nuts (measure after chopping)
- 1/3 cup fresh blueberries for topping
Instructions:
Salad:
In a 9x13” pan, mix the gelatin and boiling water until dissolved.Topping:
Mix sour cream with softened cream cheese, sugar, and vanilla in a mixing bowl with an electric mixer.Notes:
- Note 1: Preparation time does not include the time required for the gelatin to congeal.
- Note 2: I like to prepare this the night before I need to serve it.
