INGREDIENTS:
- 1 cup butter (salted or unsalted, 2 sticks)
- 2 tablespoons lemon juice (freshly squeezed)
- Zest from half a lemon
- 2 garlic cloves (cut up into chunks)
- 1/2 cup shallots (cut up into chunks)
- 2 tablespoons Dijon mustard
- 1 tablespoon prepared horseradish
- 3 tablespoons fresh flat leaf parsley (cut up into chunks)
- 1 tablespoon fresh thyme (cut up into chunks)
- 1 tablespoon fresh chives (cut up into chunks)
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon sea salt or kosher salt
- 1/2 teaspoon freshly ground black pepper
- Pinch of ground cayenne pepper
INSTRUCTIONS:
- Melt butter slowly in a small saucepan over low heat. Remove it from heat once melted and pour it into a small mixing bowl.
- Put all the other ingredients into a small food processor and process until you get a fine paste.
- Add the processed ingredients to the melted butter and whisk them together.
- Serve it melted as a dip or brushed on foods. Alternatively, refrigerate it slightly to use as a spread. You can also chill it until it becomes solid, then melt it halfway and whisk to a creamy consistency, as shown in the photos. Use it as a dip or brush it on before serving.
