INGREDIENTS:

  • 1 cup butter (salted or unsalted, 2 sticks)
  • 2 tablespoons lemon juice (freshly squeezed)
  • Zest from half a lemon
  • 2 garlic cloves (cut up into chunks)
  • 1/2 cup shallots (cut up into chunks)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon prepared horseradish
  • 3 tablespoons fresh flat leaf parsley (cut up into chunks)
  • 1 tablespoon fresh thyme (cut up into chunks)
  • 1 tablespoon fresh chives (cut up into chunks)
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon sea salt or kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Pinch of ground cayenne pepper

INSTRUCTIONS:

  1. Melt butter slowly in a small saucepan over low heat. Remove it from heat once melted and pour it into a small mixing bowl.
  2. Put all the other ingredients into a small food processor and process until you get a fine paste.
  3. Add the processed ingredients to the melted butter and whisk them together.
  4. Serve it melted as a dip or brushed on foods. Alternatively, refrigerate it slightly to use as a spread. You can also chill it until it becomes solid, then melt it halfway and whisk to a creamy consistency, as shown in the photos. Use it as a dip or brush it on before serving.
