Many of us probably have a couple of favorite Crockpot chicken recipes. You know, the ones where you just throw all the ingredients in, and by the end of the day, you have a tasty meal, like juicy chicken in a yummy sauce.

But making Crockpot recipes takes time and planning, and let's face it, I don't always have a lot of time (and my planning skills are not the best 🙈). Even though putting everything in the Crockpot should be easy, it's not always.

That's where the Instant Pot comes in handy. It allows for last-minute planning, and I can still whip up a hot, tasty, and comforting meal for my family.

MAKE DINNER SIMPLE WITH INSTANT POT SHREDDED CHICKEN AND GRAVY

Life seems busier now than when I was a kid. Back then, dinner time was a big deal at my parents' house. It was rare to have anything else scheduled during supper, and family dinners were our usual routine.

As my kids grow up, I understand the value of family time. I hope they have the same good memories of family meals that I do.

NOTES AND CHANGES:

I use low-sodium chicken broth in this simple chicken and gravy recipe because the gravy packets are quite salty.

I strongly suggest using homemade cream of chicken soup for great flavor, but you can use the canned kind if you prefer. Just use 1 can of condensed cream of chicken soup plus one can of water.

To mix up the taste a bit, try using one packet of chicken gravy mix and one packet of ranch dressing mix.

Ingredients

  • 2.5-3 lbs boneless skinless chicken breasts, each cut in half
  • 2 cups low-sodium chicken broth
  • 2 packets chicken gravy mix (0.87-oz each)
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 cups homemade cream of chicken soup

Instructions

  1. Put the chicken pieces into the Instant Pot. Pour in the chicken broth.
  2. Sprinkle the gravy packets, black pepper, and garlic powder over the chicken, but don't mix.
  3. Close the lid and set the vent to sealed. Choose a cook time of 6 minutes at high pressure.
  4. After cooking, let the pressure release naturally. Once the pressure is released and the valve has dropped, carefully open the lid.
  5. Take the chicken out and shred, slice, or chop it (I usually shred it but leave some bigger pieces).
  6. Add the homemade cream of chicken soup to the gravy in the Instant Pot. Whisk until it's fully mixed and smooth. Put the chicken back into the gravy and stir.
  7. Spoon the chicken and gravy over mashed potatoes, rice, biscuits, or noodles to serve.
