Blackened Steak and Salmon Alfredo

Ingredients:

Pasta:

  • 8 ounces of cavatappi pasta

Steak:

  • 1 pound of top sirloin steak, cut into 1-inch cubes
  • 1 teaspoon of blackened seasoning
  • ¼ cup (½ stick / 57 g) of unsalted butter

Salmon:

  • 1 pound of salmon, skin removed, cut into 1-inch bites
  • 1 teaspoon of blackened seasoning
  • 1 tablespoon of vegetable oil

Sauce:

  • 1 small yellow onion, diced (about ½ cup)
  • 2 teaspoons of minced garlic
  • 2 cups (476 g) of heavy whipping cream
  • 2 cups (200 g) of freshly grated parmesan cheese
  • 1 tablespoon of blackened seasoning
  • ½ teaspoon of kosher salt
  • ½ teaspoon of black pepper
  • Chopped parsley for garnish

Instructions:

Pasta:

  1. Boil a large pot of salted water over medium-high heat.
  2. Add pasta and cook al dente according to package directions (8-10 minutes).
  3. Reserve 1 cup of pasta water; drain the rest and set aside.

Steak:

  1. Season steak cubes evenly with blackened seasoning.
  2. In a large skillet on high heat, melt butter.
  3. Place steak pieces in the skillet and cook for 1-2 minutes per side, until browned outside and pink inside.
  4. Transfer steak to a plate and tent to keep warm.

Salmon:

  1. Pat salmon dry with paper towels and season evenly with blackened seasoning.
  2. In the same skillet over medium-high heat, add oil.
  3. Once hot, add salmon pieces and cook for 2-3 minutes per side until seared and golden brown, cooked through to an internal temperature of 145°F.
  4. Transfer salmon to the plate with the steak and tent to keep warm.

Sauce:

  1. In the same skillet, add onions and cook until softened (3-5 minutes).
  2. Add garlic and cook for 1 more minute.
  3. Add heavy cream, ¼ to ½ cup of pasta water, parmesan cheese, blackened seasoning, salt, and pepper.
  4. Stir until the cheese melts and the sauce thickens slightly.
  5. Add cooked pasta to the skillet and toss to coat. Add more pasta water as needed for desired consistency.
  6. Top pasta with cooked steak and salmon pieces.
  7. Garnish with parsley and serve immediately.
