Yummy Meatball Skewers: A Tasty Treat for Everyone!

Making Meatball Skewers is super easy and a lot of fun. It's a special appetizer or main dish that the whole family will enjoy! This recipe puts a cool twist on the classic meatball sandwich, making it even more delicious.

If you like the classic cheesy meatball sandwich, you'll love this spin on it. These Meatball Skewers are not just tasty; they're also great for a quick meal or a different kind of appetizer. And if you want a healthier version, you can use ground turkey instead of beef.

These meatballs are extra special because they are stuffed with yummy cheese. To make them even more flavorful, I brush garlic butter on the sticks before baking. After that, I bake them again with more garlic butter and cheese, making them super gooey and delicious.

1. Meatballs

In this recipe, we make our own meatballs filled with flavors like herbs, spices, breadcrumbs, and Parmesan cheese. If you're in a hurry, you can use frozen store-bought meatballs, but they won't have that cheesy surprise inside. Another option is to get premade meatballs from your local deli and add a cube of cheese to them!

2. Mozzarella Cheese

I really like using mozzarella cheese to stuff these meatballs. It's the kind of cheese that becomes perfectly gooey and melty. However, you can try any cheese you like. For a bit of spice, you can even go for a spicy jalapeno Havarti or pimento cheese!

3. Pizza Dough

To keep things quick and easy, I use store-bought pizza dough. The easiest one to work with is Pillsbury pizza dough from a tube because it's pre-rolled! You can also use a ball of store-bought pizza dough or make your own at home.

4. Garlic Butter

We all agree that a little garlic butter makes everything taste better! To give the pizza dough a nice golden brown color and add extra flavor to the meatballs, I brush garlic butter on the skewers before baking. After baking, I brush on a bit more garlic butter for that extra kick.

5. Parmesan

The perfect finishing touch for these freshly baked meatball skewers is Parmesan. The cheese melts wonderfully once it hits the baked skewers, making them simply delicious.

6. Marinara Sauce

You can enjoy these skewers as they are or dip them in marinara sauce! Store-bought sauce works great. I personally love grabbing a jar of Nonna's secret recipe marinara sauce from my local Italian bakery for that extra special flavor.

EQUIPMENT

  • Oven for oven-baked cooking method
  • 2 Sheet Pans for oven-baked cooking method
  • Air Fryer for air fryer cooking method
  • 12 Wooden Skewers or metal

INGREDIENTS:

  • 36 cubes mozzarella cheese
  • 1 tube store-bought pizza dough
  • 12 wooden skewers
  • Marinara sauce, for dipping

MEATBALLS

  • 2 lbs lean ground beef
  • 2 large eggs, lightly beaten
  • 2/3 cup breadcrumbs
  • 1/2 cup Parmesan cheese, grated
  • 1 onion, shredded
  • 6 cloves garlic, minced
  • 4 tsp salt
  • 2 tsp chili flakes
  • 2 tbsp dried oregano
  • 2 tbsp dried basil
  • 2 tbsp dried parsley

GARLIC BUTTER

  • 1/4 cup butter, melted
  • 4 tbsp garlic, minced
  • 2 tbsp parsley, fresh chopped, or dried

INSTRUCTIONS:

  1. Preheat the oven to 375°F. Line 2 baking sheets with parchment paper. Alternatively, preheat the Air Fryer to 375°F.
  2. In a large deep bowl, mix all the meatball ingredients until evenly combined. Avoid overmixing to prevent tough and dense meatballs.
  3. Shape the mixture into 36 meatballs, adding one cube of mozzarella cheese into each. Roll the meatball firmly to seal the cheese inside.
  4. If using a tube of store-bought pizza dough, unroll it and cut into 12 long strips. If using a ball of store-bought pizza dough, roll it into a large rectangle and cut into 12 long strips.
  5. Insert a skewer through one end of the dough strip and then through a meatball. Wrap the dough around the top of the meatball and slide onto the skewer. Repeat this process with 2 more meatballs, ending the skewer with the end of the dough strip. Repeat with the remaining dough and meatballs, spacing them about 1/4″ apart.
  6. Combine all the garlic butter ingredients in a small bowl.
  7. Place the skewers on the baking sheet and brush with half of the garlic butter mixture. Bake for 20 to 25 minutes or until meatballs are cooked through, and the dough is golden brown. Alternatively, air fry for about 15 - 20 minutes until the meatballs are cooked through, and the dough is golden brown.
  8. Brush with the remaining garlic butter, top with additional Parmesan cheese.
  9. Serve with marinara sauce. Enjoy!
