Start by cooking ground beef, onions, and pepper in a pan. Add taco seasoning for that yummy taco flavor. Mix in rice, beans, salsa, and water. Cover and let it cook, and the flavors from the taco beef and salsa blend in. Add corn and cover with shredded cheese until it melts – so delicious! This Mexican beef and bean rice is great on its own or with toppings like tomatoes, avocado, sour cream, and cilantro.

Delicious One-Pan Mexican Rice Skillet Recipe with Beef and Beans

Prep Time: 10 minutes Cook Time: 35 minutes Total Time: 45 minutes Servings: 6

Ingredients:

  • 1 pound ground beef
  • 1 onion, diced
  • 1/2 red bell pepper, diced
  • 2 tablespoons taco seasoning
  • 1 cup rice
  • 1 cup salsa
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 1/2 cups water
  • 1 cup corn
  • 1 cup shredded cheddar cheese (optional)

Instructions:

  1. Cook beef, onion, and pepper in a large pan over medium-high heat until beef is cooked, about 10 minutes. Drain any excess grease.
  2. Mix in taco seasoning, rice, salsa, beans, and water. Bring to a boil, then reduce heat and simmer covered until the rice is tender, about 15-20 minutes.
  3. Sprinkle cheese on top, cover, and cook until melted, about 3 minutes.

Options:

  • Use beef broth instead of water.
  • Use enchilada sauce instead of water.
  • Top with diced tomatoes or pico de gallo.
